Home Sweet Home

We are officially home today and it is so sad to say that Vacation is officially over tomorrow. So today we have tons of laundry and catching up to do and later having a delicious meat loaf dinner tonight at my parents house!
Sooner than later, Saturday will be here and off to Jacksonville we go for a Reeby Family Gathering.


Pictures from our GA Vacation have been posted on Facebook and I'm working my way around to getting them on here!

My very first Cooking Show should be ready and posted in a couple of weeks and a I will be having a Pre-Production meeting within the week for Cooking Show Numero Dos. I am super excited for big things to come and can not WAIT to share them!!

Georgia...Sweeet Georgiaaa!

I will be out of the "office" until Tuesday the 1st of September. We are heading to Georgia for a wonderful family vacation for some relaxation, fun and most of all, great family time! I'm going to get to meet my Brother in-law from Boston and his wonderful family! I hope everyone has a wonderful week and weekend!

Fully Cooked Gooey Brownies?!

Brownies...delicious little morsels of goodness that are sent from the man below...because they easily entice any dieter to stray!

Try to make them healthier by substituting your Vegetable Oil for some Extra Virgin Olive Oil. It does not alter the taste AT ALL!

And if you like Gooey Brownies but have a hard time with them not being fully cooked, there is a way around that!!!

Purchase Mini Semi-Sweet Chocolate Morsels (any grocery store and the brand does not matter) But they are approximately .5 calories per morsel. Sprinkle a hand full in your Brownie mix and pop in the oven for the full cooking time.

Your Brownies will not only be fully cooked but they will be sinfully gooey and delicious. My husband and I could NOT stop eating them!

Coming Soon!!


Friday was an amazing and yet busy day! I filmed my very first cooking segment and it was a blast. Crazy how you never really know how much work goes just into lighting until you watch it being done. Jesse Adair is head of the project and he really is and has done an amazing job. So many "thank you's" sent (and still sending) his way! Once we get into the swing of things, the cooking segments will be posted more often. Below are more pictures of our wonderful day!

A great haircut!

Gooood Morning everyone! Before I even noticed, Wednesday has arrived! New recipes are in the works along with grand ideas!

On Sunday I went to Mia and Maxx at Tyrone Square Mall in Pinellas County and Tara did my hair. She did such an awesome job changing up my hair and giving me the "mom" haircut that I needed! Still trendy and yet easy to take care of, fix and most of all maintain!! Want highlights but don't have the time to keep retouching them? Well, Tara fixed that. We darkened my hair a tinge to bring out my blues (and sometimes greens) and placed blonde highlights in the midsection that peek out. Subtle yet very stunning. Updating my color won't be an issue because the way she colored it, the color with subltly fade and so my roots will not be very apparent. This was the first phone call in a while that my family recieved after a haircut that was not filled with tears! Get some YUM Quick and Easy!

This is a very delicious recipe that was quick and easy! It took me less than 30 minutes to make and that was using frozen ravioli! No thawing necessary for this!! I had enough time in making this that I was able to whip up Banana Pudding so my husband was out the door with dinner and a dessert!

The Pampered Chef ® Zesty Ravioli
Skillet
Recipe

Your Shopping List:
heavy whipping cream
fresh baby spinach leaves
6 oz (175 g) provolone cheese
olive oil (or clean it up by using Extra Virgin Olive Oil)
1 small jalapeño pepper
3 garlic cloves
2 cans (14.5 oz/398 mL each) diced tomatoes with onions
salt (Clean it up with Sea Salt instead of table salt)
coarsely ground black pepper
1 pkg (24 oz/700 g) small frozen cheese ravioli
Halved grape tomatoes (optional but delicious)

Ingredients:
1/3 cup (75 mL) heavy whipping cream
4 cups (1 L) loosely packed fresh baby spinach leaves
6 oz (175 g) provolone cheese, grated
1 tbsp (15 mL) olive oil (or clean it up with Extra Virgin Olive Oil instead)
1 small jalapeño pepper, seeded
3 garlic cloves, pressed
2 cans (14.5 oz/398 mL each) diced tomatoes with onions, undrained
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) coarsely ground black pepper
1 pkg (24 oz/700 g) small frozen cheese ravioli
Halved grape tomatoes (optional but delicious)


Directions:
1. Measure cream using Easy Read Measuring Cup. Wash spinach in large Stainless Mesh Colander; drain. Grate cheese using Ultimate Mandoline fitted with grating blade. Set aside cream, spinach and cheese.

2. Add oil to (12-in./30-cm) Skillet; heat over medium-high heat 1-3 minutes or until shimmering. Finely chop jalapeño with Food Chopper. Add jalapeño to Skillet; cook and stir 1 minute or until crisp-tender. Press garlic into Skillet with Garlic Press; cook and stir 15-20 seconds or until fragrant.

3. Add tomatoes, salt and black pepper to Skillet; cook and stir with Bamboo Spatula 1-2 minutes or until simmering. Add ravioli; stir to coat. Cook, uncovered, 4-5 minutes or until tender. Stir cream into Skillet. Cook, uncovered, 1-2 minutes or until simmering. Sprinkle spinach over ravioli; cook, covered, 1 minute or until spinach starts to wilt.

4. Remove Skillet from heat. Top with cheese; cover Skillet and let stand 1-2 minutes or until cheese is melted. Garnish with grape tomatoes, if desired.

Yield: 8 servings

Nutrients per serving: Calories 400, Total Fat 20 g, Saturated Fat 11 g, Cholesterol 65 mg, Carbohydrate 37 g, Protein 19 g, Sodium 870 mg, Fiber 3 g

Cook's Tip: Wear plastic gloves when working with jalapeño peppers. The juice from the peppers can create a burning sensation on the skin.

For a dish with more heat, do not seed the jalapeño pepper.

MY FIRST POST!!

I am VERY excited to say HELLO to everyone and welcome you to viewing my blog! My name is Danielle and I'm known as a "Jill" of all trades. But most importantly, I am a Mother to a BEAUTIFUL baby boy, named Boston who is 7 months old! I am also a Consultant for the Pampered Chef . I love to decorate, cook, bake, do things in a jiff, budgeting, creating small master pieces and I really wanted to share it with everyone out there!
